Ingredients:

For Frying Noodles:

  1. 150 grams noodles (hakka noodles, instant noodles, or whole wheat noodles)
  2. 4 cups water
  3. ½ teaspoon salt (adjust to taste)
  4. 2.5 tablespoons corn flour (corn starch)
  5. Oil for deep frying

For American Chopsuey Sauce:

  1. ½ cup shredded cabbage
  2. ½ cup shredded carrot
  3. ⅓ cup thinly sliced capsicum
  4. ¼ cup chopped spring onions or onions
  5. ½ teaspoon finely chopped ginger
  6. ½ teaspoon finely chopped garlic
  7. 3 tablespoons tomato ketchup
  8. 1 tablespoon soy sauce (naturally fermented or brewed)
  9. ½ tablespoon sweet red chili sauce or sriracha sauce
  10. 1 tablespoon sesame oil, peanut oil, or sunflower oil
  11. 1.5 to 1.75 cups water
  12. ½ to 1 teaspoon sugar (adjust to taste)
  13. ¼ teaspoon black pepper powder (adjust to taste)
  14. Salt to taste
  15. 2 tablespoons chopped spring onion greens or coriander leaves

For Corn Starch Paste:

  1. 2 tablespoons corn flour (corn starch)
  2. 2 tablespoons water

For Garnish:

  1. 1 tablespoon chopped spring onion greens or coriander leaves

Instructions:

Boiling Noodles for Chopsuey Recipe:

  1. Heat 4 cups of water in a saucepan over medium to high heat.
  2. Add salt and oil to the boiling water.
  3. Add the noodles and cook them until they are firm to the bite (al dente).
  4. Strain the noodles and rinse with fresh water. Let them cool for 1.5 to 2 hours.
  5. Sprinkle corn flour over the cooled noodles and mix well.

Frying Noodles for Chopsuey Recipe:

  1. Heat oil in a deep frying pan or wok.
  2. Add noodles in batches and fry until golden and crispy.
